For the Rosti:
- 250g sweet potato (about 1 medium potato)
- 2 tsp cumin
- 2 tsp mixed herbs
- 1 egg
- 1/2 red onion, finely diced
- 3 tsp chopped garlic
- 2 tsp chopped chili
- Salt and pepper to taste
For the Toppings:
- 6 eggs (for poaching)
- 125g spinach
- 50g cherry tomatoes, quartered
- 1 tsp vinegar (for poaching water)
To finish:

Method
1. Prep & Preheat
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
2. Make the Rosti
Wash and coarsely grate the sweet potato, then place it in a large mixing bowl. Add the cumin, mixed herbs, 1 egg, diced onion, garlic, chili, and a pinch of salt and pepper. Mix everything together with a fork until well combined.
Form the mixture into 6 small, flat rosti shapes and place them on the prepared baking tray. Bake for 30 minutes, flipping them carefully after 20 minutes to ensure both sides get evenly golden.
